My Friend Ann’s Corn Dip

I’m a fan of cream cheese. And since I’m forever on a health jag, it’s I buy it every time I’m at the grocery store. I like it in frosting. I like it with pepper jelly and crackers. Sometimes I like to stir a little in my grits. Cream cheese is so versatile. I love it.
One of my Bunco girl friends, often brings a corn and jalapeño dip that is always a hit.
Here’s the recipe
1 small bag of frozen corn
1 block of softened cream cheese
1 stick of butter
Some jalapeño slices(the kind in the jar)
Mix the butter, cream cheese and corn together and put it in a baking dish. Flatten it out so that it looks neat. Then, add jalapeño slices so that they cover the top. Bake in the oven at 400 degrees until bubbly. The top will brown just slightly.
Serve this with crackers. You will never bring any of this home. So, don’t count on left overs.
