         ZOO CHEE NEE.  That’s how my grandmother’s 88-year-old niece always pronounced it.  She was very much the rule follower.  And she wasn’t compromising grammar rules for the sake of Zucchini.  It wasn’t going to talk her into being a rule breaker.  I have a cousin named Cheryl who she always called CHAIR UL.   She was sticking to the rules and was having no part of this (CH) madness. 

So, in her memory, my friends, I share with you.  ZOO CHEE NEE pasta.  Enjoy!

1 pkg linguine

4 zucchini grated

1/2 cup grated sharp cheddar cheese

1/2 cup plain yogurt

2 cloves garlic

1 tablespoon of olive oil

salt and pepper to taste

Put your water for your pasta on and salt it well. 

Saute your chopped garlic in the olive oil.  Before it browns, add about half of the zucchini and stir it in before adding the rest.  Season it well.  Let it cook over medium heat while the pasta is cooking.  Drain the pasta, add the zucchini, the yogurt and the cheese.  Stir it all together and you have it.  ZOO CHEE NEE pasta.  Break the rules, have seconds.   

*I sometimes toast pine nuts to sprinkle on top. 

This pasta is really easiest if you have a grating attachment for your mixer or a salad shooter.   I know the cheddar cheese seems like a weird addition, but trust me, it works.  Easy!
